Ingredients

2 cups quick-cooking oats, dry
1 1/2 cups puffed kamut cereal
1 1/2 cups nonfat powdered milk
4 scoops vanilla low-carb protein
1/4 cup ground flax seed
1/4 cup Sugar Twin brown sugar substitute
2 egg whites, beaten stiff
1 cup Torani SF Brown Sugar Cinnamon coffee syrup
1/4 cup unsweetened apple juice
1 teaspoon cinnamon
1/2 cup (small jar) babyfood prune puree
Directions
Preheat oven to 325 degrees. Prepare a 9 x 13 baking dish with nonstick cooking spray, set aside. In a large bowl combine oats, kamut, powdered milk, protein powder, sugar substitute and flax seed. In a smaller bowl combine beaten egg whites, coffee syrup, apple juice, babyfood prune puree and cinnamon. Stir together, add to dry ingredients and mix well by hand. Spread mixture into prepared baking dish and smooth top flat. Tap dish to remove excess bubbles (the kamut seems to create air bubbles when mixed with wet ingredients and will leave holes in the bars). Bake 25-30 minutes or until top is dry and edges are golden brown. Remove from oven, cool slightly and turn out onto a cutting board. Divide into 16 pieces. I wrap these individually and freeze for later use.
