Ingredients

    3.5 cups canned/drained Black Beans - No salt Added (365 Brand - Whole Foods)
    3/4 cup Whole Grain Brown Rice (Publix Natural)
    1 teaspoon olive oil
    1 large onion, chopped
    2 cloves garlic, chopped
    1 cup chopped tomato (seeds eliminate)
    1.5 cups low sodium, low fat vegetable broth
    1 teaspoon cumin
    .25 teaspoon cayenne pepper
    1 jalapeno chopped
    .25 cup cilantro chopped (optional)

Directions

1) In a stockpot over medium-high heat, heat the oil. Add the onion, garlic, tomato and jalapeno and saute 4 minutes. Add the rice and saute for 2 minutes.

2) Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 40 minutes. Add the spices and black beans cook 2 minutes to warm and combine.

3) Lightly grate low-fat cheddar cheese over top and add small dollop of low-fat sour cream. Lightly sprinkle cilantro and serve.
