Ingredients

    * 2 cups GF All-purpose flour
    * 1 tsp Xanthan gum
    * 1 Tbsp baking powder
    * 1/2 tsp baking soda
    * 2 Tbsp sugar
    * 1 tsp kosher salt
    * 1 stick butter, diced and cool
    * 1 cup buttermilk (or 1 cup milk plus 1 Tbsp white wine vinegar)

Directions

Preheat oven to 450F. Line a baking sheet with parchment paper and set aside.

Whisk together the flour, xanthan gum, baking powder, baking soda, sugar, and salt. Add the butter and cut in with pastry cutter or fork. Add buttermilk and stir to combine. Dough will be sticky.

Place a second sheet of parchment paper on your work surface, and dust with more GF flour. Transfer the dough to the floured work surface and pat into a 1" thick disk. Using a 2" biscuit cutter, cut out as many biscuits as possible. Roll up the scraps into a new disk and cut more, until you've made 12 biscuits or used up the dough.

Bake for 15-17 minutes, or until golden brown.
