Introduction

Healthy nuggets made with grated zucchini and other fresh whole foods. Great as a side dish, or as a quick breakfast. These can be made ahead of time and frozen for up to 1 week. Ingredients

    1 medium zucchini, grated and drained
    2 eggs or 1/2 cup egg substitute (I used Best of the Egg)
    1/2 cup spinach, rough chopped
    1/4 red onion, diced
    2 medium crimini mushrooms, thinly sliced
    1/2 cup panko bread crumbs
    1/2 cup grated parmesean cheese
    1 clove garlic, minced
    1/4 tsp red chili powder

Directions

Combine all ingredients in a large bowl. Batter will be chunky. Spoon 1 - 2 heaping tablespoons into individual cupcake cups (I used silicone cups) and place in cupcake baking pan. Bake at 400F, check after 15 minutes. Zugs are done when the egg is completely set (no liquid) and the nugs are slightly brown on top (about 18 minutes total).

Serving Size: Makes 6 servings, 2 nugs per serving
