Ingredients

    Cake:
    1 egg
    2 tablespoons mashed banana
    1 baby carrot, shredded
    2 tablespoons almond flour
    2 teaspoons stevia
    1 tablespoon Greek yogurt
    1 teaspoon pumpkin pie spice
    a pinch of baking powder

    Cream Cheese Frosting:
    1/8 cup tofu
    1/4 cup Tofutti cream cheese
    1/4 teaspoon vanilla extract
    1 teaspoon stevia


Tips

Directions

1. Mix all cake ingredients in a mug
2. Microwave for 1-2 minutes
3. Remove cake from mug and chill in freezer while you make the frosting
4. Blend all of the frosting ingredients together until smooth
5. Slice cake in half, add frosting inside, on top and garnish with extra carrot shreds, walnuts and cinnamon

    faster and easier would be the 3-2-1 cake, take an Angel Food Cake Mix and a Carrot Cake Mix (one has to be Angel Food) mix together, take 3 tbs of the combined mix, 2 tbs of water, mix in a mug, place in the microwave for 1 minute. add whatever topping you want. rest of mix in airtight container - 7/9/14

    This cake is delicious and so easy and quick to make. You only need 1 teaspoon of stevia and it is sweet enough. I used light cream cheese with stevia for filling. You could use jam or any other filling you like if you don't like tofu. I think I will throw a few raisins in next time. Yummy. - 10/4/13

    We made this using Splenda and more carrot.I left out the baking powder since I didn't have it and it was still delish. I also used cream cheese for the icing as we are not lactose intolerant. ALSO a great tip is to lightly oil the mug first. So much easier to clean. - 12/11/13

    Can regular flour be used instead of almond flour? Will use low fat cream cheese instead of tofu. - 10/4/13
