Introduction

These smokey, ooey-gooey grits are comforting with a bit of a kick! These smokey, ooey-gooey grits are comforting with a bit of a kick!
Number of Servings: 10

Ingredients

    1/4 to 1/3 cup Texas PeteŽ Hot Sauce, to taste
    1.5 cups chicken stock
    1.5 cups milk
    3/4 cup of grits
    2 tbsp. salted butter
    8 oz. shredded colby-jack cheese
    Salt and pepper to taste
    1 lg. onion, peeled and sliced into half moons
    2 lbs. Andouille or your favorite smoked sausage
    3 tbsp. oil
    Chopped chives or parsley for garnish

Directions

Bring the chicken stock and milk to a boil. Reduce the heat and rain in the grits, whisking the whole time. Add the Texas PeteŽ Hot Sauce and butter, continue to cook over a low heat, whisking often until the grits soften, about 20 minutes. Remove from the heat and stir in the cheese until melted and well mixed. Season to taste with salt and pepper.

Heat the sausage through on the grill or in a hot oven. Meanwhile place the sliced onions and oil in a pan, season with a little salt and pepper and cook slowly over medium heat stirring often till they soften and caramelize. They will turn a deep brown color. Serve the sausage on a bed of grits with the caramelized onions and chives as garnish.
