IntroductionServe with low fat shredded cheese or a dollop of fat free sour cream, and baked tostitos for dipping/scooping. Serve with low fat shredded cheese or a dollop of fat free sour cream, and baked tostitos for dipping/scooping.
2 cans corn, no salt added
2 cans black beans, no salt (or drain & rinse)
2 cans diced tomatoes, no salt added
2 packets low sodium taco seasoning
1 package Smart Ground veggie protein crumbles
2 bell peppers, diced (mix & match, yellow, red, or green)
add one extra can of water
bring to a boil,
simmer for 25 minutes.
Makes 12 1-cup servings.
*If you can't find "no salt added" canned veggies, drain and rinse them, then put back in their cans and fill up with fresh water before adding to pot (to get the right amount of liquid in the recipe.)
