Ingredients

    2 cans corn (drain and rinse)
    2 cans black beans (drain & rinse)
    2 cans diced tomatoes, no salt added
    2 packets low sodium taco seasoning
    1 package Smart Ground veggie protein crumbles
    2 bell peppers, diced (mix & match, yellow, red, or green)

Tips

*Try to find "no salt added" canned veggies to cut down on sodium. You can also make your own taco seasoning and omit salt.
You could also add more beans and omit the veggie crumbles. Or try veggie chorizo.
Great served with some tostitos scoops and / or vegan shreds or vegan sour cream.


Directions

throw it all in a pot
add 3 cans of water
bring to a boil,
simmer for 25 minutes.
Makes 12 1-cup servings.
