Introduction

Ingredients

    1/4 cup onion, chopped very fine
    1/2 tbsp olive oil
    1/2 cup frozen spinach thawed
    2 cup All Whites
    1/4 tsp cayenne pepper
    1 cup sliced mushrooms
    2 tbsp flour
    dash of salt
    dash of pepper
    1 cup fat free cheese
    1/4 cup 1% milk
    1/2 tbsp Brummel and Brown spread with yogurt

Directions

Heat oil in skillet, add onion and mushrooms, cook until softened. Add flour, salt, pepper, cayenne pepper, and milk, stir until flour dissolved. Add to large bowl. Add egg whites and cheese, stir until mixed. Add to greased (with Brummel and brown) pie pan. Bake in 325 oven for 45 minutes or until knife in center comes out clean. Let stand 10 minutes before serving.

    Delicious! Made it as written - lots of flavour though I may add slightly more ground pepper next time. Great hot or room temperature but straight from the fridge dulls the flavour. Will make again. - 4/23/14

    great tasting recipe, good for taking to work for breakfast or a lunch, just add some sprouted bread and some fruit and its a great low calorie meals - 4/19/11
