Introduction

Ingredients

    2 cups diced cooked chicken breast
    10 oz. box of frozen spinach, thawed and drained well
    1/2 cup fat-free sour cream
    1/2 cup mayonaise
    1/2 teaspoon garlic powder
    1/2 teaspoon white pepper (or black)
    3/4 cup grated parmesan cheese
    1/4 cup l/f mozzarella

Directions

Preheat oven to 350. Combine the chicken and spinach in a greased 8"X8" baking dish. Mix remaining ingredients together. Mix about a 1/4 of the sauce mixture with the chicken and spinach mixture and spread out across the bottom of the dish. Spread the rest of the sauce mixture over the chicken and spinach. Bake, uncovered, for 40 minutes or until top is nicely browned. The browner the top is (not burnt though) the better this dish is.

    Delicious but quite rich. I added mushrooms and used half fat mayo. I think next time I'll use about half the cheese recommended in order to cut back the fat a bit. - 1/16/12

    This was FABULOUS. I cooked the cubed raw chicken in some olive oil with red onions, mushrooms, salt and pepper. When it was almost done I added 2 minced garlic cloves. I mixed everything together, rather than layering, and sprinkled the top with a little paprika. I also added cream to the sauce - 7/10/12

    My husband really loved this and even went back for seconds. He said he does not usually like these kind of dishes but he loved this one. I made the Carbquik Redlobster cheese biscuits to go with this. - 1/21/14
