Introduction
For those who don't like pumpkin: it's not very pumpkin-y! For those who don't like pumpkin: it's not very pumpkin-y!Number of Servings: 6
Ingredients

1/2 tbsp butter
1 tsp Olive Oil
1/2 cup minced Onions
4 cloves Garlic, minced
2 cups arborio rice
1/2 cup White Wine
5 cups low sodium broth (any kind), heated to a simmer
1 tbsp dried Sage
2 cups pumpkin, roasted whole, peeled , seeded, and mashed
1/3 cup Grated Parmesean Cheese
salt & pepper to taste
Directions
Sautee garlic and onion in olive oil and butter over medium heat until fragrant. Add rice and stir for 5 min. Add wine and stir until little liquid is left. add the sage, and 1 cup of broth, and stir until liquid is absorbed. repeat with the remainder of broth. add pumpkin, heat through, shut off the heat, add the cheese, salt, and pepper, and serve.
