Delicious! I only had 1.5 cups arborio rice and someone watching carbs, so decreased rice, liquid, and low fat Parmesan cheese. Left others as is. Had 2 quarts total, so adjusted it to 8 one cup servings for 237 calories. It was fantastic and easy to make!
Wow, arborio rice is 160 calories for 1/4 cup! Even regular white long grain is 150 calories for 1/4 cup.
