Crustless Salmon Quiche

Ingredients
2 (6oz) cans boneless chunk style salmon, drained1/2 cup shredded mozzarella cheese1/2 cup shredded low-fat cheddar cheese1 medium onion, chopped and sauteed with cooking spray2 tbsp flour4 eggs1 cup skim milkfew dashes red pepper sauce
Directions
Toss together salmon, cheeses, onion and flour.
Put in a sprayed 9-inch pie plate.
Beat eggs slightly; add milk and pepper sauce.
Pour over salmon mixture.
Bake uncovered in a 350 degree oven 35-40 minutes, or until a knife inserted in the center comes out clean.
Let stand 10 minutes before serving.

    This was a good and easy supper dish. I did add chopped spinach to up the Vitamin C and Potassium content. Buying a high quality salmon is crucial to have the texture turn out well. I'm going to try it with Jack Mackeral next week. - 2/17/09

    I did not like this. I thought it was very runny and had too much of a fish flavor and not enough other flavor. We added nutmeg, red pepper flakes, and pepper. It was stil did not turn out well. I think it would be better with a milder fish or some shirmp and crab. - 1/28/08

    It's a nice alternative for salmon. I added frozen spinach, slightly thawed. That made it runny, and it had to cook longer. Thaw and drain excess water if you add spinach. I also think it would be better with red salmon instead of the pink I had on hand. We LIKE the salmon flavor. - 2/21/09

    I made this tonight for supper. I put in 2 eggs and eggwhites. I also added 3/4 cup broccoli that was thawed and drained & added 1/4 cup red pepper. On the top one thinly sliced plum tomato and I added fresh bread crumbs over the tomatoes. That gave it a little crunch. Didn't add Cheddar cheese. - 3/14/21

    Very good - I added some fresh chopped spinach and made mine in muffin tins - had more filling than egg mixture, so I had to add some and poured it in a mini loaf, so I got about 7 servings. Along side a salad, nice dinner! - 1/21/13

    We love crustless quiche but never thought of salmon till I saw this. I never use hot sauce but I did use dill weed and fresh cooked Atlantic Salmon we loved it, I used 2 eggs and egg whites cholesterol is too high for us.Excellent recipe Thanks Pat in Maine. - 11/25/12

    This was a really good recipe but next time I'm using a cake pan instead of a pie pan cause it was very hard to get it into the oven without spilling everywhere! I also used 2% cheese instead of full fat. I'd definitely make this again though! - 8/8/11

    Thanks for this recipe - the whole family LOVED it!! I used 1 14.75 oz. can salmon, added 1/2 tsp. salt, 1/4 tsp. pepper, parsley, subbed sharp cheddar for the low fat cheddar, omitted the hot sauce for the kids, and wallah - amazing.
