Ingredients

    4 oz boneless skinless chicken breast
    1 cup brown rice, long grain
    1 tsp The Pampered Chef Southwestern Seasoning Mix
    1/2 pkg (10 oz) frozen mixed vegetables

Directions

Rinse chicken with water & leave slightly wet.
Rub TPC Southwest Seasoning into chicken (allow to set for better flavoring).
Grill chicken until cooked completely (use a meat tenderizer with a flat side to pound the chicken flat for even cooking if needed).
Meanwhile, prepare rice & vegetables according to directions. You may either mix the rice & veggies for a festive look or you may serve them separately.
Serves One, may double etc...

    Easy enough. I've done a chicken breast rub of many kinds. Not a fan of mixed frozen veggies...to bland. Prefer a fresh veggie steamed with a squeeze of lime, or maybe a baked beet. - 7/9/09

    1 cup of rice is too much for me (rice spikes my blood sugar)so I will cut the amount I use. Also use Mrs. Dash seasoning to limit my salt - 7/9/09

    I've done something similar with the spices that I have at home - garlic powder, onion powder, cumin, cayanne, & cinnamon which is included w/some Mexican dishes. I would do bowtie pasta or something else. I'm planning to start trying the brown rice next. - 9/6/10

    I like the idea of using Mrs dash seasoning because it has no salt (must watch hubby's hi blood pressure). Also will use fresh veggies that are in garden or in season in store- much more flavorful than frozen. We love the brown rice here. Thanks for recipe idea!! - 10/25/10

    Know I am going to try this. I will use Ms. Dash seasonings to cut back on my salt intake and I will cut the rice in half(cut back on my carb). I am also going to try the next time with Taco Seasonings and red,yellow, peppers. - 9/6/10

    Other posters are right - Pampered Chef is a direct sales company. You may be able to find the seasoning on eBay, otherwise hit their website and find a consultant. Other substitutions are great, too, though! - 4/22/10
