Introduction

Ingredients

    • 1 grapefruit, peeled and sectioned
    • 2 oranges, peeled and sectioned
    • 1 16 oz. can of black beans, drained and rinsed
    • 1/2 cup red onion, chopped
    • 1/2 avocado, sliced
    • 2 tablespoons lemon juice
    • black pepper to taste

Directions

Combine all ingredients. Serve at room temperature.



Makes 4 servings.

    I changed a few of the ingredients also. Used a can of butter beans, red kidney beans, mandarin oranges and one whole navel orange and red onion. I added 6 large shrimp cut into quarters, along with a whole avocado. I mixed the lemon juice with a Tbs of honey and fresh ground pepper. Very good! - 4/16/09

    This was really great. And definately the most colourful salad I've had. I also tried it with tangerines and pomelo instead of oranges and lima beans instead of black beans. All variants work great. - 3/8/09

    wonderful salad but a warning some medications fight with grapefruit so be aware. Check with you drug phamplets or your pharmicist as it interfers with cholesterol drugs and anti-rejection drugs. Be happy and safe.

    excellent base salad that benefited from adding in a lime/honey/olive oil dressing! You could also do orange/honey/oil or a combination. I needed to rinse the beans better ! - 7/8/08

    I made this for a family reunion. It was good. The neat thing was it is to be served at room temperature. The refrigerator usually becomes quite full. Several people said they liked it. My husband did not like it as much but he ate it. - 6/16/08

    Yummy! I "cheated" and used Mandarin oranges and already sectioned grapefruit in a jar from my produce section (rinsed and drained or course!) That means I can have all the ingredients on hand and just worry about getting a good avocado. - 4/15/08

    yummy and so creamy! i didn;t add the onion, instead the other half of avacado.

    I made this again for a potluck at work. i added an extra orange, and som red bell pepper! it would be great with mango!

    This is a great recipe. I make a few changes to spice it up. I added a little basil, soy sauce hot sauce ,salt and 1/2 T olive oil. Everyone really liked it. I used avocodo, but I think it would have been great without it too. - 4/18/08

    I substituted canned (drained) mandarain oranges (2 large cans) for the grapefruit and oranges, since my boyfriend can't eat grapefruit (a medication issue). I forgot the onion, but it was still quite yummy!. The only "dressing" was the lemon on the avocado, and the residual black bean juice. - 2/19/13

    I made the salad. I didn't have guacamole, so I added some french onion dip, just to combine it, about 2 tbsp. I served it on one large romaine lettuce leaf, per person. 2 of 3 kids ate it and liked the fruit in there. I think this is a new discovery.. Black beans have a different texture. - 5/9/08
