Ingredients

    8 oz uncooked spagheti
    1/4 cup margarine
    1 cup sliced mushrooms
    1 stalk celery, sliced
    1 clove garlic, minced
    3 tbsp all-purpose flour
    2 1/2 cups skim milk
    1/4 teaspoon salt
    1/4 tsp pepper
    1 1/2 cup cubed fully cooked turkey
    1/3 cup shredded swiss cheese

Directions

Prepare spaghetti as directed on package. Rinse and drain. Set aside.

heat oven to 350. In a saucepan, combine 1 tbsp margine, the mushrooms, celery and garlic. Cook over medium heat for 5 to 7 minutes, or until celery is tender-crisp, stirring occasioanlly. Stir in remaining 3 tbsp margarine until melted. Stir in flour. Cook for 30 secons or until mixture bubbles.

Blend milk, salt and pepper. Cook over medium heat for 10 minutes, stirring frequently. Reduce heat to low and cok for 2 minutes longer or until sauce thickens and bubbles, stirring occasionally. Combine all ingredients in casserole dish and bake for 30 minutes.

    This is much lower in calories, fat and especially sodium (!) than the popular recipes using canned soups for sauce. And it's also BETTER! Thanks for a great recipe that's as easy as using soup ... it's a keeper! - 2/22/11

    Was delicious! Kids loved it. I modified it just a bit: added 1/4 C white wine and a splash of chicken broth to the mushroom mixture. Simmered it down, then added the flour before adding the milk. Also added a thinly sliced onion, 1/2c shredded cheddar & 1/4 C Parmesan cheese. - 6/20/13

    Something is wrong with the nutrition calculator on this one. The spaghetti says there are 200 cups for 34K calories, yet the overall calories for the dish is 156. When I did my makeover, calories were 230. Dish IS delicious though! - 6/19/13

    I'm not clear about your instructions, are you adding milk to the butter/veggie mixture to get the "soup"? - 1/8/13
