Introduction

An interesting but tasty dessert, perfect for a cool evening. An interesting but tasty dessert, perfect for a cool evening.
Number of Servings: 1

Ingredients

    1 cup cooked sweet potatoes, mashed


    1/2 cup mashed banana (1 medium)


    1 cup evaporated 1% milk


    2 tablespoons packed brown sugar


    2 egg yolks, beaten


    1/2 teaspoon salt


    1/4 cup raisins


    1 tablespoon sugar


    1 teaspoon ground cinnamon

Tips

Try it garnished with pecans or walnuts!


Directions

1. In a medium-sized bowl, stir together sweet potato and banana. Add milk, blending well. Add brown sugar, egg yolks, and salt, mixing thoroughly.



2. Transfer mixture to a non-stick one quart casserole pan (or light oily pan).



3. Combine raisins, sugar and cinnamon; sprinkle over top of sweet potato mixture.



4. Bake in a preheated 300° F oven for 45-50 minutes or until knife inserted near the center comes out clean.



Serves 6.

    I added cinnamon and clove to the batter. I also used currants though if I make this again, I would try cranberries. I didn't find it dry but only baked it for 30 minutes. If you shake the pan and it doesn't jiggle, it's cooked. - 3/29/08

    I eliminated the raisins, added sugar and cinn to custard. I cooked in custard dishes in a hot water bath for about 20-25 min. Creamy and delicious! You would never know this is "diet" food. Yum! - 3/16/07

    Mama always referred to sweet potatoe pie as a custard because of the way the filling was made. I make it the same way and this recipe is similar without the banana and raisins. Adding a 1/2 tsp of vanilla and 1/2 tsp of almond or rum extract would be good here too! - 3/25/09

    This was very good and yes, it CAN be divided among 6. ;D Hubby didn't think it was sweet enough, but once he added some cool whip on top he was content!

    I enjoyed this...easy to make and it satisfied my dessert-craving sweet tooth! I used dried currants instead of raisins and added allspice to the mix. It was just *slightly* dry. - 3/27/08

    I made this with a 15 oz. can of Organic Sweet Potato Puree, added 2 eggs, 1/4 tsp. ginger and 1/2tsp. cinnamon to the mixture. Then ladled it into custard cups and microwaved at 50% power for about 23 minutes. Delicious and easy! - 9/21/10

    Both DH and I love sweet potato anything, but this just wasn't good. Strong banana taste and smell, and odd consistency. Definately will not make like this again. Maybe try without bananas again. I like bananas too, but the combo didn't work for us. - 4/5/08

    I'm gonna say this anyway: it sounds like it would be delicious. The problem I have with it is, you are taking 1 cup of potato and 1/2 of a banana and DIVIDING IT BETWEEN 6 PEOPLE! Come on now! Sweet potatoes are good for you, and so are bananas! I lost 6 pounds this past week & I had both! - 3/25/09

    i saw this recipe yesterday and decided to give it a try..made it & served as dessert after dinner,,it was a big hit.. i doubled the cinnamon, used egg substitue unstead of 2 eggs yolks, cranberries instead of raisins and splenda brown insteand of regular brown sugar..will make this often. - 8/16/10

    For diabetics and dieters, substitute Splenda brown sugar and leave out raisins. Egg substitute can be used in place of real eggs, and I add 1/4 tsp of nutmeg or allspice. - 9/19/10
