Introduction

Ingredients

    2 c. cut up turkey or chicken
    1 pkg (6oz) Uncle Ben's long grain Wild Rice
    1 can cream of mushroom soup
    1/3 cup milk (I used 2% for the calorie calculations)
    1/4 c chopped onion
    2 1/4 cup boiling water.

Directions

Mix all ingredients in 2 quart casserole or 9x13 dish. Cover tightly. Bake in a 350 degree oven for 50 minutes or until rice is tender. Uncover and bake 10-15 minutes longer.

    Decrease cals/carbs/fats by using reduced fat chicken or mushroom soup.
    Don't leave in oven too long, or will become thick.
    Add mushrooms (canned, 4 oz) to add some vegetable count.

    We make something very similar with chicken. We don't add milk to it though. We don't add onion either, but we do add onion flavoring. I think it is really good. I think it would be better with cream of chicken soup since I am not a mushroom fanatic, but it is still quite good. Thank you. - 11/10/09

    My whole family liked this, including my 2 year old twins! I added frozen peas, sundried tomatoes and mushrooms for a little extra flavour and veggies. Will definitely make this again! - 11/28/08
