An easy, hearty soup-all in one pot! An easy, hearty soup-all in one pot!
Number of Servings: 14

Ingredients

    6 parsnips
    8 cups water
    1 large red pepper
    3 cloves garlic
    7 large Granny Smith apples, fresh
    1-1/2 cup red lentils
    2 tbsp salted butter
    1/2 tsp salt or to taste
    2 cups chicken broth
    3 tbsp curry powder
    1/4 tsp hot pepper sauce, or to taste

Directions

Wash and cut apples, parsnips and red pepper into rough pieces and put in 4 qt slow cooker, leaving skins on all veggies.
Combine all recipe ingredients in slow cooker with water (omit or add some water depending on volume of ingredients in pot).
Cook on high until all ingredients are soft-about 2 - 3 hours.
Then, using a hand blender, puree all ingredients in cooker until smooth.
Continue cooking on low until all flavors have combined and you're ready to eat!
Easy as pie and better for you.
Makes 4 qts soup, about 14 servings.

    I know the title says curried but I don't like curry and just left it out. Soup was still tastey. - 8/18/08

    This is a nice soup--it wouldn't all fit into our 4 qt slow cookier, so we cooked it in a slightly larger Dutch oven. - 10/21/08

    Hey there 53pinkroses - I would suggest Zuchini or Cauliflower. Potatoes soak up flavor and can dilute a soup, but these veggies would be closer in texture to parsnips. - 8/18/08

    Sounds terrific! I'm going to fix a pot for a family who loves healthy food and is expecting a new baby. I love parsnips and there are not many in the super markets. Red lentils really make this sound good. - 8/18/08

    I made this exactly as the recipe states. It took 3.5 hours on high in the crock pot. I put it in the fridge overnight and pureed it the next day. It has really good flavour but I'm undecided on the texture. Not sure I'd make it again but I'm glad I tried it. - 1/9/13

    Very Good
    I made this recipe for Christmas with my family, I thought it was very good, turns out my family (including my husband) is not big on curry so I have a lot of leftovers in the freezer. I suggest to start with a much smaller batch unless you know your family will like it. - 1/4/11

    I made this and had it the next day and I did not like it at all! Maybe it is better fresh, but it was really sweet (maybe the sugars came out of the parsnips?) I will definitely not make it again and it was torture for me to throw it all out - at least I only made 1/2 batch - 4/27/10

    LOVE THIS SOUP!! I used Golden Delicious apples instead of Granny Smith and it's fantastic! I'm not a fan of the Granny Smiths, so... also, I bet this would be really great with vegetable stock instead of chicken stock if you want to go vegetarian! A really fantastic recipe.     How many ounces are considered a serving????? If it's only half a cup then there's 325 calories per serving. WAY too HIGH when you're trying to lose weight. It tasted too good to be true. - 2/2/10
