Ingredients

    2 1/2 cups flour
    1/2 cup cocoa powder
    1 1/2 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    3/4 tsp salt
    1 1/2 cups sugar
    1/3 cup canola oil
    3 eggs or 3/4 cup egg substitute
    1/2 cup unsweetened applesauce
    2 tsp vanilla
    2 cups packed, grated zucchini
    1/2 cup mini chocolate chips



Directions

Preheat oven to 350 degrees. Spray 2 loaf plans with nonstick spray.

In large bowl combine flour, cocoa, baking powder, baking soda, cinnamon and salt. Set aside.

In a medium bowl, whisk together sugar, egg, applesauce, oil and vanilla. Stir in zucchini.

Add wet ingredients to dry indgredients. Stir until just moistened. Fold in Chocolate chips. Spread batter evenly in prepared pans.

Bake for 50 minutes, or until toothpick inserted in center of loaf comes out clean.

Cool in pans for 5 minutes. Remove from pans and let cool on wire rack before serving.

    Truly decadent recipe. Took out the oil and subsituted with flaxseed, applesauce and fat free yogurt. Preferred it in Muffin form as it is a really rich bread. Re-calculated into my own cookbook using Splenda and other substiutions. - 9/18/08

    I was not impressed with the bread, gonna try muffins next time. I seem to be a better muffin baker than bread. I used Splenda and egg substitute, and oil and applesauce in my batch. Sometimes these things taste better the next day. I hope so!! - 8/31/08

    My kids loved this. I doubled it, and it was almost too much for my KitchenAid. I used 3 C. whole wheat flour and 2 C. white and it still turned out great. We will make this again--soon! - 8/31/08

    Pretty good - I subbed wheat pastry flour for 1.5c white flour & added a few Tbs. of flax & oat bran. While it is very moist, I was a bit disappointed in the taste - I thought it should be a bit sweeter. Then again, since I made it in a 9X13 pan, I was probably thinking "cake" when I ate it. - 8/30/08

    I didn't give this a rating, because I was torn. The zuccini bread was delicious, and it was devoured! But the fact that the calorie count was wrong made me upset. Shouldn't there be a check for that? We are here to watch what we eat, & if the recipes aren't accurate, what's the point? - 8/30/08

    I made this twice already. It was moist and deliscious. The first time I used allmost all wholewheat flour and almost no oil. I used applesauce. It was really deliscious. The second time I used mostly soy flour,some white flour and a little whole wheat. I wouldnt use that much soy flour again. - 8/29/08

    Really good. I made muffins instead of bread and baked for 15-17 minutes. My two boys (5 and 7) and I love them. My husband thought they had an unusual taste, which is probably the hint of cinnamon you taste with the first bite. I added a few more chocolate chips. - 8/28/08

    Do you think this would work in a 9 x 13 pan? My mom made a sim. recipe (but 1 cup oil!) every July 4th topped with reg. ch. chips instead of frosting. It would be nice to have a healthier sentimental fav. - 8/20/08

    This was the calorie count I got when I refigured this and if you use 3/4 cup of applesauce and no oil Calories are 131.7 and Fat grams are 1.7. If you use 1/3 cup oil and 1/2 cup applesauce Calories 155.6 and fat grams 4.7.

    Made this and family loved it. We used half real sugar and half Splenda to cut calories and also my husband is diebetic... so he could have a slice. We cooked it in a bundt pan for about 5 minutes longer than the recipe called for. Our bread pans were MIA. Will definately make again. - 8/12/08

    I used 1 1/2 cups whole wheat four and 1 cup all purpose. I used a whole cup applesauce and real eggs. It was absolutely awesome. My sons said it was like a brownie with vegetables. It was GONE. I did use the chocolate chips, but I'm going to leave them out next time, I don't think it need it - 8/12/08

    I'm not sure why yours came out dry. When I make it is very moist and everyone that I know always says that it is so moist. Maybe you baked it a little too long.

    I also tweaked this one a bit. Used 1 cup of whole wheat flour and 1 1/2 of all purpose flour. Also didn't have applesauce and used homemade pear sauce. Made 12 muffins and 1 loaf sized cake. Have a lot of zucchini in the garden - froze some grated. Will do this one again. YUM! - 8/6/08

    I realized halfway through the recipe that I was out of applesauce so I used 4 small yellow Ontaro plums. I was also short on zucchinni if you can believe that! I used 1 1/2 c. instead of the 2 c. called for. But it still turned out super. The chocolate chips scare me so for me this a treat only. - 8/5/08

    In the ingredient list from the link on the right hand side, you have 3/4 cup applesauce listed, and no oil. If the calorie counts are to be correct for people, it needs to be consistent. Should I do 3/4 cup applesauce or should i do 1/2 cup applesauce + 1/3 cup oil? - 8/2/08

    Very tasty! The nutritional info must have been calculated without the canola oil - makes it a little misleading, since the oil is in the ingredient list. Using canola oil, it looks to be about 4g of fat per serving, and about 140 calories. - 7/30/08

    I caught this after I had submitted the receipe. It does call for 1/2 cup unsweetened applesauce. I am thinking of trying it with only applesauce. I made this today and made the tiny little muffins. They turned out well other than it takes for ever to make them.
