Ingredients

    Cooking Spray
    2 Skinless Chicken Breasts, chopped into 2-inch cubes
    1 lb Red Potatoes, chopped into 2-inch cubes
    1/2 bunch asparagus, trimmed and cut into 1-inch pieces (OR Red & Green Peppers, OR Vegetables of your choice)
    1/3 c fresh basil, chopped
    4 garlic gloves, thinly sliced
    1.5 TBSP Olive Oil
    1 tsp chopped fresh rosemary
    Ground Pepper to Taste
    1/2 cup Chicken Broth if desired

Directions

Preheat oven to 400 degrees and spray a baking dish with cooking spray. Add chicken, potatoes, tomatoes, vegetables, basil, garlic, chicken broth, and olive oil. Sprinkle with rosemary. Add pepper if desired. Bake for approx. 45 minutes, turning occasionally, until tender. Serve.

    Awesome recipe, I added 5 tsp of basil and sprinkled the rosemary on top. I used dried spices instead of fresh. I used green and red pepper as well as onion and it was great. This is one of our new staples. Thanks - 7/26/10

    Making this right now as a very last minute supper idea. Smells divine! Not sure where the tomatoes come from, though, in the instructions as I don't see them in the ingredient list. Great meal for clearing out your fridge. - 9/3/13

    I haven't made this yet. Plan to tonight. But I am confused about the ingredient list. No where in the list does it mention tomatoes but when you get to the directions it lists them. Is it supposed to have tomato and if so how much? - 3/21/13

    Not bad! I used vegetable broth, asparagus, green beans, and zucchini in mine. I also added salt and a bit of low sodium soy sauce. Next time I would add some red pepper flakes or cayenne powder for a little heat. - 4/5/11

    Pretty good. used thin sliced chicken tenders, asparagus, and yukon gold potatos. came out pretty good, used half a can or so of broth and covered with foil. hubby really liked it. didnt make much, double recipe next time - 12/20/10

    Some veggies don't do so well in the oven for my taste, so I like to steam them instead so they are more vibrant in their color and texture. I love all of the other ingredients and the chicken really tastes good with the olive oil, fresh basil and garlic. - 1/31/14

    I'm confused, in the ingredients I don't see tomatoes, in the instructions it says to add tomatoes, how many, canned or fresh? Here is the copy/paste of what I'm talking about: Add chicken, potatoes, tomatoes, vegetables, basil, garlic, chicken broth, and olive oil.

    Have made this recipe for a long time now but I use the whole chicken breast and not chopped. Usually use peppers, mushrooms, onions, garlic and sweet and/or white potatoes. For more than 2 chicken breasts use two rimmed cookie sheets - one for the chicken and the other for the vegetables. - 1/31/14

    Although the comments seem to be good, 400 degrees for 45 minutes seems quite hot and a long time for chicken to be cooked. Has anyone found the chicken pieces to be a bit tough? I usually go with 356 degrees for 30-35 minutes. - 3/7/13

    I had to cook my veggies separate, due to their frozen nature. I had to omit the rosemary as I do not have any. I used dried basil, but even with those modifications it was very good! My boys (who don't really eat that many healthy things) enjoyed it and cleaned their plates! - 1/6/13

    I am having hubby pick up the ingredients after work! I hope my comment doesn't post eight million times, I'm having some trouble with the site. But I intend to cover the dish for the first 30 minutes and also have a pan of water underneath just to ensure moist chicken. Thank you so much for sharing - 11/22/10

    Great recipe! I used all sorts of veggies - zuchini (large strips so it doesn't go mushy), onions, celery, red and yellow peppers, and lots of garlic! Instead of the broth (didn't have any), I used a low-fat can of cream of celery soup. Low-fat cream of mushroom is good too! - 8/6/10

    Used broccoli, baby carrots, and cauliflower.The only thing was (and it was MY fault, not the recipe)my chicken was too big, and I cooked it too long.Tonight, I separated the potatoes, mixed the veggies with alfredo sauce and pasta.Made potato cakes with mozz, eggs, bread crumbs, and garlic powder. - 9/2/09

    I plan to try this over the weekend. For those concerned about the chicken drying out, try placing a pan of water on the bottom of the oven ... the steam from it will help it from drying out. - 7/21/09

    I used new red potatoes, asparagus, yellow squash and zucchini...and a 1/2 cup of fresh stock.

    I can't wait to make it again and try other veggies. It'll be another whole new meal!

    This had a good flavor, although it would be helpful to have in the recipe that the potatoes cook faster when you cover the dish. I also will make this as a winter dish and add more liquid to make it into stew. It was just too hot for summertime. - 8/22/08

    According to the ingredients, there is .5 Cup chicken broth and .75 c chopped tomatoes.
    I made without those ingredients (as I forgot to buy at the store!), definitely needed the broth as the chicken dried out. The potatoes and asparagus were fantastic, though. I look forward to making this again!

    Delicious! I'll make it again and again varying the veggies and spices to change it up. I browned the chicken in my dutch oven, added the chopped veggies, and put the whole thing in the oven with the lid on. I didn't use any chicken broth, there was plenty of juices from the chicken and veggies. - 7/29/08

    I am sorry I am just now getting back to you. I used about a 1/2 cup of chicken broth just to give it a little added juice. That is the amount I included in the nutritional info. It is really a matter of personal taste. I hope you enjoy!
