A veggie alternative to scrambled eggs A veggie alternative to scrambled eggs
Number of Servings: 2

Ingredients

    1 box (12.3 oz) Mori-Nu Firm Silken Lite Tofu
    50 g bell peppers (strips)
    3 medium mushrooms (sliced)
    55 g red onion (sliced)
    52.5 g roma tomato (seeded and diced)
    50 g spinach (chopped)
    2 cloves garlic
    1/2 Tbsp olive oil
    1 Tbsp curry powder
    pinch of salt
    pinch of pepper

Directions

Heat oil in skillet over medium heat.
Add onion and cook for a few minutes.
Add mushrooms and peppers and cook a few more minutes.
Lower heat to medium-low, add tomato and garlic.
Add curry powder and mix well with veggies.
Crumble tofu into skillet, mix well.
Continue to cook till tofu dries out a bit.
Mix in spinach.
Add salt and pepper, if desired.

Makes 2 servings.

    This is one of my staples! You can use any veggie you like, or like me when I'm in a hurry, pre-cut froxen mixed vegetables are quite as perfect. Easy, tasty and filling! - 2/17/15

    Incredible!
    I have been seeing recipes for scrambled tofu and thought I must try this as an egg substitute. I loved it and it will become a staple. I added artichoke hearts, turmeric-1/2 to 1 teaspoon and 1/2 teaspoon celery seed, oregano and parsley. So many combos possible. Can't wait to do it again! Thanks! - 2/6/17

    This is one of my favorite recipes, but I definitely use regular tofu instead of silken. Still, it's delicious, and you can alter the veggies or spices to your liking. I'm a fan of thyme. :) - 1/13/09
