Ingredients

    8 chicken thights with skin removed
    1 tsp, pepper
    1.2 tsp. salt
    1 Tbsp. Olive Oil
    1 1/2 cups chopped onions
    1 tabsp. fresh Ginger Root
    2 cloves garlic minced
    2" x 1" orange rinde white pith removed
    2 tsp. cardamom
    1 tsp. turmeric
    1/4 tsp. groud cloves
    1 cup chicken stock
    7 ounces dried appricots

Directions

Makes 4 servings
Preheat oven to 350 degrees
Season chicken with salt and pepper
Heat Oil in large ovenproof pan .
Add oiions, and cook until translucent. Add Ginger, garlic, orange peel, cardamom, turmeric, and cloves and continue cooking 1min. Add apricots and stock. Remover from heat.
Nestle chicken over apricot mixture and cover pot tightly and bake til chicken is tender. About 90 min.
****Remove orange peel before serving!

    Very Good
    We really enjoyed this. I used half chicken stock and half orange juice and left out the orange peel. Served it over brown rice. Tomorrow we'll have the leftovers and serve it with cousous.

    Next time, I'll try cooking the rice with the chicken. Great recipe and thanks for sharing.

    Excellent, though the orange peel makes it a bit too bitter. I think I'll use 1/2 Cup of OJ next time instead. Beautiful coloring properties. - 12/21/08

    Hey everyone I LOVE this recipe the only thing i did was i put half a cup of orange juice and half a cup of chicken broth. It is absoloutely delicious and i love it,

    I did 1/2 cup orange juice and then 1/2 cup water adn it worked out great as well.

    Incredible!
    I made some changes (purely because that's what I had in the pantry). Chicken breast instead of thighs, a tsp. of ground instead of fresh ginger & I replaced 1/4 of the stock with orange juice. I loved this recipe, although my family were not so keen (they have no imagination about food). Wonderful! - 9/19/08

    Glad you liked it, I did too, I served it with Couscous. My son liked everything, but the actual chicken thigh, I think I will use skinless, boneless breasts next time.
    This is a recipe I use to bring inflamation down. I had a severe reaction to celebrex.
