Ingredients

    * Cauliflower, raw, 1 head, medium (5-6" dia)
    * *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.)
    * Milk, nonfat, 1.5 cup
    * Old Bay Seasoning, 2 tsp
    * *Kraft 2% Shredded Cheddar Cheese, 2 cup
    * Pacific Natural Foods Organic Low Sodium Vegetable Broth, 1 cup, 4 serving

Directions

peel and cut the potatoes into cubes. Cut the cauliflower into pieces. Add the potatoes and cauliflower to a large pot with the vegetable broth and Old Bay, cover and cook until tender. Use an immersion blender to blend until nearly smooth. add the milk, and cheese. gently reheat, but do not boil, as the milk might curdle. Makes about 8, 1 cup servings

    so Good!!! i sauted a chopped onion, 2 stalks celery, and the cauliflower in 1 tsp olive oil to intensify flavor, used fat free 1/2 and 1/2 - 9/18/11

    Very Good
    I did add garlic and the old Bay. I used broccoli and cauliflower and I added crumbled bacon to the shredded cheese on top. It was a hit with my DH and I. Thanks for the potato soup PLUS.!

    the first night we had this, I thought it was just ok, but after bringing it to work for the last three days, I have to say I love it now! I used water instead of veg broth, and added extra old bay. I will probably leave the cheese out next time, since the flavor seems to be lost. - 6/3/11

    I used more nonfat milk and a can of Cheddar cheese soup and didn't need as much cheese, I also added some celeryand onion, husband and one of two kids liked it, the other kid would've if she hadn't seen me using the immersion blender! I didn't have old bay either but stuck in a bit of worschestire. - 9/1/09

    I made a few changes only because I did not have the exact ingredients. I used a can of chicken broth and velveeta cheese. I didn't have old bay seasoning, so I went on line and looked up a clone recipe for it and used what spices I had on hand to match as closely as possible. Will sure make again - 3/29/09

    Very good! My husband didn't care for it but he doesn't like cauliflower. With that being said, this doesn't make a super huge pot, so I would make it again for myself and eat on it a few days. Next time I'll add some more seasoning. - 2/3/09
