Ingredients

    1- 9" frozen pie crust
    1 Cup diced cooked lean ham
    1 Cup diced low fat swiss cheese
    1/2 Cup low fat shredded cheddar cheese
    1 Cup Skim milk (can substitute any low fat milk)
    4 eggs (or 2 eggs and 2 egg whites)
    1 scallion sliced thin, or 2 tbsp onion diced
    2 Tbsp diced green bell pepper
    2 strips fully cooked bacon, crumbled
    1 tsp dijion mustard
    1/8 tsp freshly ground black pepper


Directions

Combine ham and cheese and spread in bottom of pie crust. Beat eggs, add milk, stir in all other ingredients. Pour egg mixture over ham and cheese layer. Bake at 350 degrees for 35-45 minutes until knife inserted in center comes out clean. Cool 10 minutes. Garnish with fresh diced tomatoes if desired. Serving size is 1 slice. Makes 8 servings.

    I thought the mixture was a bit much for regular 9" crusts...if I make this again, I'll probably lessen it by 1/4. I had a LOT of spillage. Other than that? DELICIOUS! - 3/15/10

    Very Good
    The flavor was great! I did not have bacon so did not use it. I added a teaspoon of Onion powder. The bottom of the crust did not bake for me, so prebaking might help. I also changed it to 6 servings rather than 8. It made it a nice breakfast serving for less than 350 calories. - 10/27/13

    O.K.
    The bottom crust did not really bake. I think it would be better if the crust is partially pre-baked. I added asparagus on top for an extra veggie serving, and it had a good taste! - 4/21/09
