Ingredients

    Unsweetened Applesauce - 2 cups
    Vegetable Oil - 2 tsp
    Spelnda - 1 cup
    Brown Sugar - 6 tsp
    Vanilla Extract - 2 tsp
    Almond Extract - 1/2 tsp
    Wheat Flour - 1 1/2 cups
    Unsweetened Powdered Cocoa - 2/3 cup
    Baking Powder - 4 tsp
    Baking Soda - 1 tsp
    Salt - 1 tsp
    Ground Cinnamon - 1/4 tsp
    Semisweet Mini Chocolate Chips - 1 cup

Directions

-Preheat oven to 350 degrees
-Grease muffin tins with Pam non-fat cooking spray
-Combine Applesauce, Oil, Splenda, Brown Sugar, Vanilla Extract, and Almond Extract in large bowl - mix well
-Combine all remaining ingredients except the chocolate chips - mix well
-Add dry ingredients to applesauce mixture and mix until well blended
-Add chocolate chips and mix with spoon
-Spoon batter into muffin cups
-Bake for 20-22 minutes
-Muffins are done when tops are firm to the touch

    I can't believe this is so low cal! I keep checking my fitness pal to make sure I didn't miss anything from the recipe. It is a bit sweet so I will use less Splenda and miss the cinnamon next time. Great recipe! - 4/10/13

    Incredible!
    These were really good. However, I don't have a mini muffin pan so I had to use a larger one. Got 12 muffins out of it. Did the calculations (as I had to make a few changes) and each one is about 166 calories. Tasted very good and everyone enjoyed them. - 4/21/12

    Amazing recipe! This is way better than any boxed mix for muffins or cupcakes I've ever had. I'm experimenting with making it into cake format for my dad's birthday. He loves them more than I do and he's a health nut who couldn't be happier with the nutritional content. - 7/11/10

    I have these baking right now and haven't tasted the finished product yet. The batter tastes phenomenal! Very fudgy. One suggestion, though. It would be helpful to include a baking time (20 min or until tops are firm) as a guideline rather than just "bake tops are until firm". - 2/7/10

    These are great for satisfying that chocolate craving. The artificial sweetener flavor was a little too pronounced for me, and I only used 3/4 cup of it... next time I might switch out some Splenda for granulated sugar - 4/26/09

    Loved this recipe. I didn't have the applesauce on hand so I used canned pumpkin. Had to add some water though...
    I used cinnamon chips instead of chocolate chips (to go with the pumpkin). Tastes wonderful!
