Ingredients

    Brown Rice:
    1 tablespoon olive oil
    1/2 onion chopped
    1/2 red bell peper, chopped
    2 cups water
    1 cup short grain brown rice
    1/4 cup parsely finely chopped
    salt and pepper (optional)
    Salmon
    Salmon:
    2 skinless salmon fillets(about 4oz each)
    1 tablespoon olive oil
    1 clove of garlic minced
    1 tablespoon ginger grated
    1 teaspoon soy sauce
    1 teaspoon maple syrup
    2 green onions chopped

Directions

Makes 4 servings

heat oil in med saucepan add onions and peppers cook for 3 minutes. Add water and rice and bring to a boil. reduce heat, cover and simmer for 50minutes untl tender and water is absorbed. When rice is done add parsely and fluff with fork. Meanwhile prepare salmon marinade and pour ove salmon and let marinade for 15-20 minutes. Heat grill pan on med and cook for 3 miutes per side until cooked. Serve with rice.

    This was my first You On A Diet recipe and it is a real winner!! The book gives you a whole half cup of rice and fillet, I believe, but this is a great meal! - 9/20/10

    The rice was great! I used white long grain minute rice instead and only took a few minutes. The salmon was bland, maybe overnight marinade or stronger spices next time. I made my dinner with baked southwest style beans. Overall really good dinner! - 1/11/13

    The salmon was subtlety sweet and flavorful with a distinct Asian taste. Definitely a keeper recipe! The rice pilaf was bland. I will add minced garlic next time. - 5/23/11

    The salmon was wonderful!!! Asian salmon was full of flavor and easy to cook on the grill. The rice was a little bland, I added some all-purpose seasoning to zest it up a bit. Great dish for the whole family. Thanks! - 1/23/08
