Ingredients

    1 link of Chorizo
    8 Eggs
    1 med onion chopped
    16 corn tortillas

Directions

Place chorizo in hot pan and chop as it cooks. When it has released all it's oil drain it. Add your eggs and onions and scramble all together.

    I add rice & serve w/ tostitos refried beans fiesta blend cheese. Its yummy!! I only use a 1-2" section of chorizo. Less grease still good flavor - 6/1/10
