Introduction

These are a modified version of the Jessica Seinfeld recipe for banana bread. You can also put a couple of chocolate chips on top. My kids love these and have no idea there is cauliflower in them! Ingredients

    Ingredients:
    *Whole Wheat Flour, 3/4 cup
    *Flour, white, 1/2 cup
    Brown Sugar, 1/2 cup, packed
    *Canola Oil, 1/4 cup
    egg white, fresh, 2 large
    Banana, fresh, 1 1/2 cup, mashed
    Cauliflower, cooked and pureed, 1/2 cup
    **Flax Seed Meal (ground flax), 1/3 cup
    Baking Soda, 1/2 tsp
    Baking Powder, 1/4 tsp
    Cinnamon, ground, 1/2 tbsp
    Vanilla Extract, 1 tsp


Directions

Mix dry ingrediants with wire wisk or fork and set aside. In seperate bowl mix together wet ingrediants. Blend wet and dry ingrediants until well blended. Spoon into mini muffin pans and cook for approx. 15 minutes at 350 degrees. Cool on wire rack. Makes 48 mini muffins.
