Ingredients

    8 large eggs
    1 medium zucchini, julienne cut
    1/2 bunch fresh mint leaves, torn
    1/4 cup grated parmesan cheese
    1 tablespoon olive oil
    Salt and pepper to taste

Directions

Beat eggs, julienne zucchini and add with other ingredients into oiled pie plate. Bake at 375 degrees for 25 minutes.
