Ingredients

3-5 lbs Pork Butt cut to 3 in cubes (leave in bone)
1 c Orange Juice
1/2 c White Vinegar
5 Lemons, Fresh squeezed, seed removed
4 LG Jalapeno Peppers, or 2 Habenero Peppers
2 tsp Salt
8 clvs Garlic
6 oz El Mexicano Achiote Rojo paste, (Mexican Store)
* Tequila, 3 oz optional (use the Best)
* Banana Leaves optional (use foil) (Mexican Store)
Directions
Reserving 2 Jalapeno peppers. (or 1 Habenero)
In a Blender add all ingredients except pork, blend til smooth.
Cut up Pork into 3 in cubes, put in Large freezer bag. (2 if needed)
Pour 1/2 of the mixture into bag with pork.
Marinade for min 1 hour or more.
Line Banana Leaves in a large baking pan.
Place Marinaded Pork with juice in center of pan, then pour remaining mixture over the top.
Adding the 2 whole Jalapeno peppers.
Cover the pork with the Banana leaves.
Cover entire pan with heavy foil, pinching the edges down not to let out any moisture during cooking process.
Cook @ 325 degrees for 4-6 hrs til done.
Let rest for 10 minutes then Pull Apart
Serve Pulled with rice and beans.
Corn or flour tortillas.
Mango Salsa or Guacamole for condiments.
