Introduction

Quick and easy scones made from pancake mix. Great protein/carb breakfast. Quick and easy scones made from pancake mix. Great protein/carb breakfast.
Number of Servings: 4

Ingredients

    1/2 cup Yogurt - Plain, non-fat
    3 Tbs Creamy Peanut Butter
    2 Tbs Granulated Sugar
    1.25 cup Pancake mix

Directions

Preheat oven to 425F
Mix together yogurt and peanut butter.
Add 1 tbs + 2 tsp sugar. Mix well.
Combine pancake mix with yogurt mixture. Dough will be stiff.
Turn out onto lightly floured cookie sheet.
Pat into 1/2 inch thick circle.
Use a sharp knife to cut into pie-shaped quarters.
Sprinkle with remaining teaspoon of sugar.
Bake 15 minutes until inserted knife comes out clean.
Makes four scones.
