Ingredients

    2 Ole Mexican Foods: Xtreme Wellness Spinach & Herb tortilla wraps
    1 Medium Japanese Eggplant
    Half of a Red Pepper
    half cup Mushrooms
    2 tbs Gouda Cheese
    1/3 cup Hummus

Directions

Cut up all your veggies into small pieces and then cook them in a frying pan until tender crisp. You can use a bit of olive oil if needed we have a pretty well seasoned cast iron skillet that doesnt really need oil often.

cover 1/2 the tortilla with hummus then split your veggies between the two tortillas sprinkle the cheese on top and enjoy.
