Introduction

Rather Fattening, but once in a while I need a treat and I just watch what I eat the rest of the day or take the cheddar cheese out to help reduce calories. Ingredients

    2 cups All Purpose King Arthur Flour - unbleached
    1 Tblsp Baking Powder
    1 1/2 tsp Kosher Salt
    12 Tblsp Butter, salted or unsalted doesn't matter
    1/2 cup Buttermilk, lowfat
    1 extra large or large Egg, fresh
    1 cup Cheddar Cheese, shredded
    1 large Egg, fresh beaten mixed with 1 tsp water to brush the tops of the biscuits.

Directions

Makes 8 Biscuits

Preheat oven to 425 degrees.

Combine the following items in a mixer with the paddle attachments.
2 cups All Purpose King Arthur Flour - unbleached
1 Tblsp Baking Powder
1 1/2 tsp Kosher Salt

With the mixer on loaw add the butter and mix until the butter is the size of peas.12 Tblsp Butter,

Combine in a small bowl and mix with a fork -
1/2 cup Buttermilk, lowfat
1 extra large or large Egg, fresh
With the mixer still on low add the mixture of buttermild and egg to the batter only until moistened.

In another bowl mix the cheddar with a small handful of flour to prevent the cheddar from sinking in tthe mixture.
1 cup Cheddar Cheese, shredded
Combine in mixer on low the cheddar only until roughly combined.

Dump out onto a well floured board and knead lightly about 6 times. Roll into a rectangle 5 x 10 inches and cut to make 8 rough rectangles.
Transfer to a baking sheet lined with parchment.
brush the tops with the egg wash - sprinkle with sea salt and back for 20-25 minutes until the tops are browned and the biscuits are cooked through.
Serve warm or hot.
1 large Egg, fresh beaten mixed with 1 tsp water to brush the tops of the biscuits.
