Ingredients

    1/4 cup cooked "limed" basmati rice- cook with 1T lime juice per cup of rice
    1/4 cup black beans
    3 outer leafs chopped red lettuce
    1/4 cup chopped tomatoes
    1/4 cup chopped red peppers
    2 jumbo black olives
    1/2 oz cheddar cheese
    2 oz pulled pork tenderloin
    1 Tbsp ranch dressing mixed with
    1 Tbsp fresh cilantro and 1 tsp lime juice

Directions

Put limed rice on plate and add everything else on top, ending with the dressing. The pork could be mixed with brown sugar and salsa for the original taste. These are not reflected in the nutritional value.
