If you use the brandy, it can be very strong. You may want to reduce the brandy by half and use water for the other half. Peach or apricot brandy makes a nice substitution. Ingredients

For the filling:
½ cup (1 stick) unsalted butter, melted
1½ cups sugar
2 tablespoons all-purpose flour
½ teaspoon salt
9 large ripe peaches, peeled and sliced
¾ cup brandy or water
For the crust:
½ cup (1 stick) unsalted butter, softened
¾ cup sugar
1½ cups all-purpose flour
1 teaspoon baking powder
¾ teaspoon salt
1½ cups apple juice or milk
Directions
Preheat the oven to 350 degrees F.
To prepare the filling, melt the butter in a medium-sized saucepan over medium heat. Stir in the sugar, flour, and salt. Mix well. Add the peaches and water. Stir and heat thoroughly, about 5 minutes. Pour the mixture into a buttered deep 9" x 12" casserole dish and set aside.
To prepare the crust, in a medium-sized mixing bowl, cream the butter with the sugar. Add the flour, baking powder, salt, and fruit juice or milk. Mix well. Pour the batter over the filling.
Bake until crust is golden brown, about 1 hour.
Makes 10 servings.
