    2 Tbsp Olive Oil
    1 Green bell Pepper, chopped
    1 Onion, chopped
    3 cloves Garlic, chopped
    1 tbsp Italian herbs
    2 Chicken breast, with bone and skin on
    2 Chicken drumsticks, with bones and skin on
    1/2 c. water
    2- 28oz cans diced tomatoes, with all liquid
    1/4 c Grated Parmesan Cheese

    *Serve over pasta or brown rice*(not included in NI)


Heat 1 Tbsp oil in a skillet over med heat. Saute peppers, onions, and garlic until onion is translucent, about 5 minutes. Add herbs/seasonings for last minute. Transfer to crock pot.

Add remaining Tbsp oil to skillet and brown chicken on both sides, about 5 minutes. Remove from heat and set aside. Add water and tomatoes to skillet over med high heat, stir and scrap the bottom to release any browned bits, pour into crock pot and stir. Add chicken.

Cook on low approx 8 hours (high 4-5 hours).

*Cook pasta or rice according to package directions.

While pasta is cooking remove chicken from crock pot. Remove skin and bones and discard. Shred or roughly chop chicken and add back to the sauce. Add Parmesan cheese and stir. Serve over pasta or rice.

Makes 8-10 servings of sauce
