Introduction

Ingredients

    2 cups black beans
    1/2 cup red onions, raw, chopped
    1 cup pineapple, fresh, diced
    1/4 cup jalapeno peppers, sliced
    1 cup tomatoes, chopped
    1/2 cup sweet corn

Directions

Mix all ingredients together and serve. Refrigerating for an hour is recommended but not necessary.

    we made this and put it over fish...even my son liked it, but said it was too hot. Next time I will cut the jalopeno in half or less. Very good!! - 2/12/09
