Ingredients

1 tbsp olive oil
3 cloves garlic
12 fl oz nonfat evaporated milk
1 tsp white pepper
.5 tsp ground nutmeg
1 10 oz package fresh spinach
1.5 cups sliced mushrooms
1 cup chopped tomatoes
8 oz. chicken breast, cut into cubes
6 Tbsp shredded parmesan cheese
Directions
Heat 1 tbsp olive oil in a large skillet over medium heat. Add garlic and chicken breast. Saute until chicken is browned.
Add evaporated milk, pepper and nutmeg. Bring the mixture to a boil and let it cook until reduced so that the milk coats the back of a spoon.
Add the spinach, mushroom, and tomatoes to the pan and cover.
Cook for about a minute with the cover on, then uncover and stir.
If the sauce seems thin, add 1 tsp of corn starch that you have mixed with a little bit of water, stirring constantly. Cook for a minute more, add the cheese, stir, and pour over you favorite pasta. Makes approximately 6 servings.
