Ingredients

1 lb chicken breast
1 tablespoon avocado oil
2 cups leek diced
1/2 tsp salt
5 Tbsp flour
1 can chicken broth (low fat & reduced sodium)
1 cup nonfat milk
1/2 tsp dried thyme
1/2 tsp pepper
2 Bags of Birds Eye Steam fresh broccoli florets ( 12 oz each )
1 cup reduced fat Parmesan
1/4 cup reduced fat mayo
2 tsp Dijon mustard
Directions
Makes 6 1 1/3 cup servings
Preheat oven to 375 - Spray a 9x9 square pan with cooking spray
Place chicken in skillet, pour in water just enough to cover chicken and bring to a simmer. Reduce heat and simmer until chicken is cooked through (about 10 minutes). Drain and cut into 1 inch chunks
Heat oil skillet. Add leek and salt and cook until soft. Add flour, stir to coat. Add broth, milk, thyme and pepper and bring to a simmer. Add Broccoli and simmer again. Remove from heat and stir in one half of the Parmesan, all the mayo and mustard.
Put 1/2 of the broccoli mixture into the pan. Top with chicken, then top with last of the broccoli mixture. Sprinkle the remaining 1/2 cup of parmesan on top. Bake for 20 minutes.
