Ingredients

    1 medium onion chipped
    2 tsp garlic minced
    6 cups chicken stock
    14 oz smoked turkey sausage
    2 cups kale chopped
    3 cups great northern beans

Directions

Chop onion and finely mince garlic.
Cut turkey sausage into small round slices.
Heat soup pot to medium-high heat.
Cook turkey sausage for 5 minutes or until just browned.
Add onion and garlic cooking for 3 minutes or until onions softened.
Add chicken stock and bring to a boil.
Add kale and beans. Reduce heat and let simmer for 10 minutes.
Add crushed red pepper if desired.

    Delicious! I added a dash of balsamic vinegar and a pinch of cinnamon. Instead of crushed red pepper I added a few shakes of red pepper sauce. My family loved it. - 4/30/12
