Ingredients

    2 ounces dried mushrooms
    1/4 cup espresso powder (or finely ground coffee beans)
    1/2 cup unsweetened cocoa powder

Tips

A rub is a spice mixture that you "rub" on meat before cooking. Try the pork with Chef Meg's Mole Sauce.


Directions

Combine all in a coffee grinder.
Store in an air-tight container for up to three months.
Use one teaspoon per serving of meat.

    A basic rub. A healthy one that doesn't have brown sugar or salt. It is decent, next time maybe some chile pepper or cayenne that works well with the mocha. I put it on a pork roast or tenderloin. - 4/3/12

    This rub sounds marvelous! I will keep this as a base, then add other ingredients depending on my mood and tastes for that meal. This also sounds like a great addition to chili! Look for ethnic stores if you can't find stuff at your local market. - 1/30/12
