Ingredients
-
1/2 cup fresh wild blueberries
2 clementines (tangerines w/few seeds), peeled, sectioned
1 cp fresh blackberries
2 fresh kiwi, peeled, cut into small pieces
1/4 cup pomegranate seeds
1/2 cup fat free vanilla yogurt
1/4 cup orange juice
Directions
Peel the clementines, divide into individual sections, and cut each section in half. Remove the seeds from the pomegranate.* (These two activities take up the bulk of prep time!) Mix the five fruits together and refrigerate.
Whisk the yogurt and orange juice together and refrigerate.
About 1/2 hour before serving, let fruit sit out to "warm" a bit. Divide into 4 dishes, and top each with 1/4 of the yogurt/juice mix. Yields 4 3/4-cup servings.
*If you need to know how to remove seeds from pomegranate, check the internet for directions. Easy to do, little mess!
