Introduction
Slow Cooker Chicken Black Bean Brown Rice Soup.Soooo easy!! This was a last minute idea. Threw it together in the slow cooker for 6 hours on low.
Slow Cooker Chicken Black Bean Brown Rice Soup.
Soooo easy!! This was a last minute idea. Threw it together in the slow cooker for 6 hours on low.

Ingredients

11oz chicken
1 Can Reduced Sodium Black Beans
1 Can Reduced Sodium Diced Tomatoes
.5 Cup Brown Rice (UnCooked)
Water to cover
Paprika
Cumin
Garlic Powder
Onion Powder
Salt (to taste)
Directions
I took the chicken breast from the freezer(of which I had already quartered into 4oz servings).
Placed the chicken in the clow cooker.
Opened the cans of Beans and Tomatoes(I didnt drain either)
Placed both ingredients on top of the chicken
Added the water to cover
Added the half cup of brown rice(Barley could be substituted)
Added seasoning.
Turned on the slow sooker on low for 6 hours so the chicken would easily fall apart. I am sure it can be done in a shorter time like high for 4 hours. You could also add a can of corn, or fresh/frozen okra).
Keep an eye on it so the rice doesnt soak up all the water!
Eat it up YUM!
