Introduction
I made up this recipe after reading many Hungry Girl recipes. I used a lot of the ideas she uses in creating low fat, low calorie meals. It turned out great!!This is a single serving recipe, but would be great made as a large recipe. I made up this recipe after reading many Hungry Girl recipes. Ingredients

1/2 can of white tuna
1 oz. dry pasta (I used Dreamfield's)
1/2-3/4 oz. diced sun dried tomatoes
1/4 cup diced onions
1/4 cup diced bell pepper
1 oz. frozen spinach
1/2 tsp. minced garlic
1 wedge Laughing Cow Light (Mozzarella, Sun-Dried Tomato & Basil)
Parmesan Cheese (to taste)
S & P
Directions
Prepare pasta according to package directions.
Meanwhile, saute' spinach, onions, peppers, tomatoes, and garlic over low heat in a frying pan sprayed with cooking spray. (Keep heat low to avoid burning and drying out). Once vegetables are softened and slightly brown. Add tuna and toss to warm.
Drain pasta and toss with vegetables and tuna. Mix in LC cheese wedge until melted. Season to taste with S&P and Parmesan cheese. Enjoy!!
