Ingredients

    3 egg whites
    1 c. applesauce
    2 c. flour
    2 tsp. baking soda
    1/4 tsp. baking powder
    1 c. slpenda
    1 tbsp. vanilla
    2 c. shredded zucchini
    1 tbsp. cinnamon
    1 tsp. salt

Directions

beat eggs till frothy, add sugar, applesauce, and vanilla. Beat till mixture is thick. Mix together flour, cinnamon, backing soda, salt, baking powder then add to mixture along with zucchini. Pour into 3 loaf pans. Bake 350 for about 40 min. or until done. Let cool for 10 min. in pan.
The bread turns out a little sticky but was still good

    I had a horrible experience with this recipe! I made it for my mom's group yesterday and it was really sticky inside and tasted very much like artificial sweetener. I was really hoping to find a low-cal, yummy bread but I'll keep looking. - 5/7/08

    O.K.
    I think I can take with what they have said and do some adjustments and have it come out. I plan on using whole eggs, 1/2 the splenda and adding flax meal to it perhaps 1/4 c. I think maybe baking a wee bit longer as well. Thanks it gives me a good start. There is always a way, perhaps a muffin? - 3/16/10
