Introduction

Nutritioous and hearty meal. Can be seasoned to your preference. For a Mexican taste, season with cumin and chili powder. If you feel like Italian, use sweet basil and oregano. I love it with plenty of pepper and garlic! Good by itself or served over rice or quinoa. Nutritioous and hearty meal. Can be seasoned to your preference. Ingredients

    20 oz extra lean ground turkey (97% Fat Free)
    28 oz can diced tomatoes (undrained)
    10 oz package fresh baby spinach

Directions

1. Spray large saute pan with cooking spray. Add turkey and cook over medium heat until well done. Season with salt, pepper and garlic to taste.
2. Add undrained tomatoes. Next add fresh spinach (in batches if necessary ). Cover and cook until spinach is completely wilted.
3.Season to your preferences and simmer until seasoning is well blended.

Makes 5 servings (approximately 1 1/4 cup)
