Ingredients

    1 lb. 93% lean ground beef
    1 (12 oz.) bottle Killian's Irish Red Beer
    1 leek, chopped
    1 tsp. ground thyme
    3 large raw potatoes, sliced
    28 baby carrots (6 oz.)
    2 large celery stalks, chopped
    1 c. water
    1 tsp. powdered beef bouillon

Directions

Brown ground beef; add chopped leek, bottle of Killian's Irish Red, and thyme. Simmer 5 minutes. Layer potato slices, carrots, celery, and beef mixture in slow cooker. Mix water and powdered beef bouillon; pour over beef and vegetable mixture. Cook on high for four hours. Makes 8 (1 c.) servings.
