Ingredients

1# bag frozen hash browns, thawed and dried with paper towels (Alexia Organic Gold potato with seasoned salt are very good)
1 TBSP butter, melted
4 Large eggs
1 c. Egg whites
1/2 c. Half and Half
1/2 c. 1% milk
3/4 c. 2% shredded cheddar
2 c. chopped, fresh baby spinach, raw
1/4 tsp salt
1/8 tsp pepper, to taste
Directions
Preheat oven to 450 F.
Mix hash browns and butter in 9" pie plate then press firmly and evenly over bottom and sides of plate. Bake for 25 minutes until browned.
Meanwhile, beat eggs, egg whites, half and half, and milk then stir in cheese.
Place spinach evenly in pie plate, then pour in egg mixture. Bake for 30 minutes, until golden brown all over and pie is very puffed.
Remove from oven and allow to cool at least 10 minutes before cutting.
Serve with spinach salad and fresh cut fruit.
