Number of Servings: 12


    2 cups flour
    2/3 cup sugar
    2 tsp baking powder
    1/4 tsp salt
    1/2 cup butter (melted)
    1/2 cup peanut butter
    1/2 cup milk
    1 large egg
    2 tsp vanilla extract
    1/4 cup jelly, jam, or preserves


Preheat oven to 400. Prep muffin pan with cooking spray or paper cups.
Mix together dry ingredients. In a separate bowl, mix the butter and pb until smooth, then add milk, egg, and vanilla. Add butter mixture to dry ingredients, and mix just until the dry ingredients are moistened.
Divide "batter" (mine more closely resembles cookie dough) in half. Spoon about 2 Tbsp into each muffin cup (I pressed it a little to form a "bowl" in the center for the jam), then spoon about 1 tsp of jam into each cup. Top with remaining batter, about another 2 Tbsp each.
Bake until golden, about 15-20 minutes. Cool completely...
