Ingredients

    2 1/2 cups almond flour (Honeyville is best)
    1/2 cup butter
    4 tsp stevia powder
    1/4 tsp sea salt
    1/4 tsp baking soda
    1 tbsp organic vanilla extract
    1/4 cup cocoa nibs (no sugar)

    NOTE: Can use melted coconut oil instead of butter - increases calories by 10 per serving.

Directions

1.) Combine dry ingredients in a large bowl, leaving out the chocolate chips for now.
2.) Mix together the wet ingredients. Add to dry ingredients and stir until well combined.
3.) Fold in cocoa nibs. Form 1 inch balls with your hands and press flat onto an all-natural parchment-lined baking sheet.
4.) Bake at 350 degrees F for 8-12 minutes, until light brown at the edges. Cool and devour.
Great to eat right out of the freezer.


Serving Size: Makes 32 cookies. 2 cookies per serving.

    This cookie is So good! Buttery, melt in your mouth, light, and just plain perfect! I used 16 drops of liquid Stevia, semi-sweet chocolate chips, and a few chopped pecans. Heavenly and good for you, too! Next time, coconut and macadamia nuts! - 9/24/13
